Welcome to Classic Cooking Academy!Classic Cooking Academy (CCA) is a 501(c)3 non-profit, private post-secondary cooking school dedicated to providing the best professional culinary education. CCA believes that a student must be well rounded in both the theory and techniques of cooking before applying individual interpretation to develop his or her own creative styles. Our students learn through close interaction with instructors as they prepare to enter a variety of culinary professions. CCA develops students with the ability to adapt to the changing culinary world in the 21st century. Classic Cooking Academy’s European and American-trained chefs instruct students in food theory and the technical skills of food preparation. We combine classic French techniques with modern and Native American ingredients to provide a solid foundation for a culinary career. The staff at CCA has over 20 years of experience training students for the demands of the rigorous culinary world. CCA will give the tools necessary to perform in a professional kitchen. Not only do students receive hands-on supervised training, they work independently to enhance their creativity and in groups to develop team-work concepts. The Native American Program has made Classic Cooking Academy famous through out the country. Classic Cooking is a Professional Culinary Education Facility. We train future professional cooks who aspire the title of "Chef". Furthermore, within our professional program rests the Native American department. It is here we study and examine how diet and food trends of Pre-Columbian America have evolved into the generalized food style called Native American food. Today NA food and cuisine has a very broad definition. The purpose of defining is to deconstruct a whole concept and understand everything there is about that concept. In our department, Native American Cuisine is our concept and it is deconstructed, questioned, and forced to prove itself unto the world. Until most Native Peoples and Professional cooks can agree on what Native American Cuisine is, our exploration will not be satisfied. Until then, there is much to examine about this style of Cuisine. The Native American Department at Classic Cooking reaches out to all Native Communities and individuals for culinary training. Hospitality enterprises are growing rapidly through out tribal lands, like hospitals, schools, assisted living, resorts, casinos and other kitchens that require professional cooks. This enables many people to work closer to home and have a career that has power to change diets and lives throughout their communities. It is in our department that we hope better and healthier food can be available to tribal lands. Classic Cooking Academy is for everyone. Our students have the benefit of learning about new ingredients that other culinary schools have yet to place in their curriculum. Foods of the Americas have never been as popular as they are today. Unfortunately, ethnocentric ideas clouded indigenous foods since conquest. Today, Native American foods are still considered exotic, which means that it is not part of the culinary norm. It is our mission to bring indigenous foods of the Americas into the norm so that our taste buds can once again explore the flavors of the earth. |
